My name is Stella and I am the owner of Healthy Harvest.
As a child, I spent many an afternoon
with my mom on our organic farm in the mountains of NC.
Grape and honeysuckle vine baskets in hand,
ol' floppy hats on our heads and smiles for days,
we playfully tended our garden, gathered our food
and went in before sundown each and every night
to prepare what, to us, were feasts!

Now I still grow organic foods in one of the
most beautiful places on earth,
but one of my greatest joys is to help
and serve our community with the knowledge
that was bestowed upon me by my mother
who worked as a Traditional Herbalist for over 30 years.

In the tradition of the Cherokee,
we at Healthy Harvest know that herbs are food
and that food is medicine.
We also hold a firm belief that
the body can and does heal itself.
As we take responsibility for our individual health
we also begin to take responsibility for the health
and well being of various other aspects of life.

The human body is intelligent
and responds to intelligent therapies.
It is our belief that
with proper nutrition including organic whole foods,
medicinal herbs and whole food supplements,
you can assist your body in healing and thus
achieve optimal health results.

At Healthy Harvest we pay special attention to ingredients and work very diligently to carry only the highest quality
whole food vitamin, mineral and herbal supplements as well as local and certified organic,
non-gm (non genetically modified) foods.

Quinoa Garden Salad
(Organic, Vegan, Gluten-Free)

1 Cup Tri-colored Quinoa
2 Cups Water
1 Cup Raw Sunflower Seeds
1/4 Cup Raw Flax Seeds
2 Organic Tomatoes, Diced
2 Large Organic Cucumbers, Chopped
1/2 Cup Chopped Fresh Cilantro
1 Organic Red Bell Pepper, Diced
1 Organic Green Bell Pepper, Diced
1/2 Cup Organic Snow Peas
Approx. 1/4 Cup Organic Extra Virgin Olive Oil
Fresh Squeezed Juice from 3 Organic Lemons
Himalayan or Celtic Sea Salt
Organic Black Pepper

Bring 2 Cups Water to a boil, add 1 Cup Quinoa. Reduce heat and simmer for approx. 20 minutes. Let Quinoa chill before adding veggies. Steam Snow Peas and Bell Peppers until soft.
To chilled Quinoa, add steamed and fresh veggies. Mix together.
In separate bowl, combine olive oil,
lemon juice, salt and pepper.
Add dressing to quinoa garden salad to taste.
